Sweet Potatoes

Sweet Potato

Sweet potatoes are a favorite food. Always looking for a different way to fix them.

Always have a few canned and frozen on hand in case I run out of fresh ones.

Cleaning kitchen cabinets and found an off brand can of sweet potatoes. It turned into a prize.

New recipe and tried it. Everybody thought it had come from the Ritz.

Try the recipe:

Sweet Potatoes Peach Bake
3 15 oz. Bruce's cut yams drained
1/2 cup brown sugar
1/3 cup broken pecans
1/4 tsp. ground ginger
1 small can of peach slices, drained
1 1/2 Tbsp. butter or margarine.

combine brown sugar,pecans,ginger,and salt.
In a casserole dish Layer half of sweet potatoes.
Then half the brown sugar mixture on potatoes and dot with butter or margarine. Repeat layering.

Bake covered in 350F oven for 30 minutes. Uncover and put drained peaches on top. Bake another 10 minutes.

Suggestion when you have left overs baked sweet potatoes save peel and chop and use for this recipe.
